Rachel's coconut-apricot bliss balls

1 cup of shredded coconut
1 cup of almonds
12 medjool dates, pitted
2 tablespoons water
1 tablespoon coconut oil, melted
½ cup of dried apricots
Blend the coconut and almonds in a food processor until you have a fine crumb. To this mix, add the dates, water and coconut oil and blend until you have a doughy consistency. Add the apricots to the mixture and pulse until you’re happy with the consistency.
Take a spoonful of the mixture and roll into a ball in your hand. Repeat with the remaining mixture. Pour some more desiccated coconut onto a plate and roll each ball, thoroughly covering them. Refrigerate your bliss balls for 2-3 hours and they’re ready to enjoy! Store in the fridge.
