Egg curry a favourite breakfast dish

My mum's egg curry is a beautiful, wholesome dish, traditionally served at breakfast.

When I step into the kitchen, I often find myself wondering what I can cook that will be delicious and satisfying.

What a delight.

What a delight.

That’s when I remember my mum's breakfast egg curry recipe. I've always enjoyed eggs and this dish, while tasty, is also easy to make.

It takes about 20 minutes to prepare and you can enjoy it in the morning, afternoon or evening. That’s what I call beautiful and wholesome.

To serve 2-3 people, here's what to do.


  • 6 boiled eggs, cut in half
  • 2 onions, chopped
  • 2 tomatoes, chopped
  • 2 potatoes chopped
  • 4 cardamom pods
  • 4 cloves
  • 1 tsp mustard seeds
  • 4 green chillies, chopped
  • 1 tbsp ginger-garlic paste (sold in most specialty grocery stores)
  • 1 tbsp red chilli powder
  • ½ tsp turmeric powder
  • 1 tsp egg roast masala (NB: not standard masala)
  • ½ cup coconut milk with ½ cup water
  • 4 tbsp oil
  • 4 chopped coriander leaves
  • Salt per taste
  • Instructions

  • Boil the eggs and cut in half.
  • Microwave the potatoes to cook (or boil for 5 minutes on stovetop).
  • Heat oil in a wok.
  • Add the mustard seeds and sauté for 2 minutes.
  • Add cardamoms, cloves, green chillies and ginger garlic paste. Sauté well for about 3 minutes.
  • Add the onion and cook, stirring, til translucent. It usually gets cooked in about 3-4 minutes
  • Add the potatoes and let it cook for 4 minutes.
  • Now add the salt, red chilli powder, turmeric powder and egg roast masala. Sauté til all the ingredients get cooked.
  • Add coconut milk and let simmer for 7 minutes.
  • Now add chopped tomatoes and mix well. Simmer another 5 minutes.
  • Finally, add the eggs, garnish with coriander leaves and simmer for 5 minutes.
  • The best bread you can have with this is the Kerala porotta (made from fine flour). Or you can go with the normal Indian or English bread. It still works.
